Potato Leek soup

This one is great for those chilly Fall days!

4 good-sized potatoes, peeled and chopped
1 leek, washed well and chopped (discard green part)
chicken broth to cover the potatoes
salt and pepper to taste

Simmer the potatoes and leeks in the broth until the potatoes are tender. Take a potato masher and mash them enough so that they are mashed up but still a little chunky. Add just enough milk or cream to make the soup look like a cream soup and heat gently.

  1. My cooking skills are seriously lacking, but even "I" can make that. :) Maybe I'll try it.
