Great question! I have high cholesterol myself (just what every 25 year old needs to hear!), and have started experimenting with ground turkey. I don't have any great recipes yet, but hopefully, I will come up with some.
One secret I have about ground beef is that I ALWAYS have my meat freshly ground by the butcher. When something like Top Sirloin is on sale (I got it for $1.88/lb a few weeks ago), then I pick out exactly what packages I want, and then I ask the butcher to grind it. They always happily do this, and it allows me to control exactly what is in my ground beef, and to choose a package that doesn't have very much fat.

If anyone knows of a recipe for meatloaf or meatballs that would work with ground turkey, I'd love to have it! Those are about the only things I haven't gotten ground turkey to work for in replacing ground beef.
